Sunday Yummy

This morning I had planned on getting my favorite crock pot recipe in the pot before leaving for church. However, when I went to the fridge for the salsa, I discovered that my sweet sister-in-law Debbie had eaten all the salsa. No Crockpot Mexican Chicken for us today. I only had about 3 minutes before we had to leave for church, so there was no time to peruse my recipe box for a recipe I had all the ingredients for. Time to get creative. I peeked through my cupboards, threw some things in the crockpot, and came out with a recipe deemed fabulous by the whole family!

Emily's Crockpot Chicken

Put 4 boneless skinless chicken breasts in the crockpot. (You can put them in frozen)

In a bowl, whisk together:
1 can cream of chicken or cream of mushroom soup
2 Tbsp. dried, minced onion (or 1/2 of an onion, chopped)
1 small can chopped, drained green chiles
1 tsp. cumin
1 tsp salt

Pour over the chicken and cook on high for 4 hours

I served it layered in the following order:
1. Brown rice (better flavor if cooked in chicken broth instead of water)
2. Spoon sauce from the crock pot over the rice
3. Cover rice with steamed, fresh spinach
4. Put chicken on top of spinach
5. Top chicken with finely grated cheddar cheese

Oh, this sounds so good! I miss my crockpot. Soon, though, very soon. Those Germans don't know what they're missing not having crockpots. And it would make my life so much easier too!
